Breakfast Casserole Muffins

Cook time: 25-20 minutes

Servings: 12 Muffins

Ingredients

  • ¾ cup of shredded hash browns
  • 6 eggs
  • 1/4 cup milk
  • 3/4 cup of shredded cheddar cheese
  • ½ cup of green onion, finely chopped
  • 16 Mom Made Foods Beef & Cheese Meatball Bites

Directions

  1. Preheat oven to 350 degrees. Grease 24 muffin pan well.
  2. Microwave Mom Made Foods Beef & Cheese Meatball Bites according to package instructions. Allow meatballs to cool, then slice into quarters and set aside.
  3. Beat eggs in mixing bowl.
  4. Add shredded hash browns, meatballs, green onions and shredded cheese. Stir to mix.
  5. Scoop egg mixture into muffin pan.
  6. Bake for 25-30 minutes or until “muffins” are set. Serve immediately. Or, let cool and freeze for quick breakfasts all week!
  7. To reheat frozen muffins, microwave on high for one minute.

 

Meatball Enchiladas

Mom Made’s dishing out our Top 10 Favorite recipes to put on your dinner table. We’ve teamed up with Sky Valley to bring you this delicious Mexican classic.

Time: 25 minutes

Ingredients

  • 1 (8 oz) box Mom Made Beef & Cheese Meatball Bites

  • 12 6 inch Corn Tortillas
  • Olive Oil non-stick cooking spray
  • 2-3 cups Shredded Cheddar/Jack Cheese Blend
  • 1 bottle Sky Valley Enchilada Sauce

Directions

  • Combine meatballs with 1 cup of the shredded cheese.
  • Spread ½ cup of the enchilada sauce over bottom of baking dish.
  • Spray each tortilla with olive oil non-stick spray
  • Fill each with about 1/3 cup of the meatball/cheese mixture.
  • Roll each tortilla up tightly with mixture in the middle and place in baking dish, seamed side down.
  • Squeeze remaining enchilada sauce out of bottle onto rolled enchiladas.
  • Sprinkle dish with remaining cheese.
  • In 375 degree oven, bake casserole for 15 to 20 minutes or until cheese is bubbly and melted on top.
